Pecan Pie Muffins

My sister-in-law passed on this recipe last week and so I gave it a try. My family pronounced it a success and I will say they are quite good (although probably not good for you!)

Pecan Pie Muffins
1 cup packed brown sugar
1/2 cup all purpose flour
1/2 cup pecans
2 eggs, beaten
2/3 cup butter
1 tsp vanilla

Cream together butter, vanilla and eggs. Add to sugar and flour mixture. Spoon into heavily greased muffin pans (the batter is very sticky) and bake at 350 for 25 minutes. Cool for 5 minutes then remove from pan. They are wonderful with a glass of cold milk.

It makes 12 muffins. Like I said, they're not good for you but a nice treat....kinda like the Turkey Hill chocolate peanut butter cup ice cream I'm enjoying right now! BTW PA people - Turkey Hill ice cream in Cincinnati is on sale for 2.49/ 1/2 gallon. With the coupon I used I got it for 1.49. You can't beat Turkey Hill! (Graeter's is good but the cost makes it much less attractive!)

Your recipe sounds good. I'll look forward to trying it. Or should I say, coaching my kids in making them while Baby and I are on complete bed rest on the couch. =)
